Add Epomaker Tide75

Description

I corrected the Tide75 firmware from Epomaker and present it as ready for the QMK mainline.

Issues Fixed or Closed by This PR

• Introduces a corrected version of the Epomaker Tide75 definitions.

As the configurations sits in the Epomaker Tide75 Repository, it contains the following three issues:

1. The byte ordering for RGB is incorrect.
2. The RGB layout matrix assignments and ordering are incorrect.
3. The default encoder resolution are too high.

Those have been corrected in this revision.
