So I ended up using pandoc in my custom GNU Makefile. This works

It does not. You're only generating the man page from the template.

No asciidoc or a2x mess.

It's not a mess. I started generating the man page with pandoc, but ran into problems where I couldn't reliably build pandoc. Moreover, pandoc was not producing ideal output. ASCII Doctor provides a much better man page.

What cargo command should do it?

cargo build

My question is how to generate a doc/rg.1 easiest.

Note also that the output of rg --help is nearly identical to what's in the man page.

I failed to understand how the recipe in build.rs should do it.
