Using Admin API for custom dashboard

First of all, huge thanks for this amazing platform! A wide variety of features out of the box with lots of power for customizations. With that said, I was planning to extend the Restaurant Delivery marketplace recipe and create a custom dashboard that the restaurant admin can use to view products, collections, categories, etc. I noticed most in the recipe uses a custom endpoint for this and NOT those existing under the Medusa Admin SDK. Is it always the case for actors other than "user(medusa admin)"?

I was thinking for logged in restaurant admin, I can do this
